RECIPES!

AS I STATED IN THE LAST BLOG, I WOULD LOVE IT IF ANYONE AND EVERYONE WOULD LEAVE COMMENTS OF RECIPES....

Dana-these cookies are vegan and sooo yummy! They do have sugar obviously but they are a nice treat.

1 mashed banana
1 cup of brown sugar
1/2 of a cup of regular sugar
slightly less than 1/3 of a cup (about 1/4 of a cup plus 1 teaspoon) of oil
1 1/2 teaspoons of vanilla extract
1 1/2 teaspoons of cinnamon
1 1/2 cups of flour
1 teaspoon of baking soda
1/2 of a teaspoon of salt
2 cups plus one my-sized handful (about 1/4 of a cup) of oats
3 tablespoons of water plus maybe a few more drops

Directions:

Mix the vegan brown sugar, vegan sugar, oil, and water. Add the banana and vanilla. then mix in the already pre-mixed together mixture of flour, baking soda, cinnamon, and salt. Stir in the oats. If it is too thin, let stand a bit so the oats can absorb the excess liquid. Bake at 350 degrees Fahrenheit for 13 minutes. To check if they are done, flip one over and it should be browned. Rip off a chunk to see it it is still raw. I usually let them sit a bit before I take them off the cookie sheet because, well, I do not really know, but it makes me not cook them too long because they finish cooking outside of the oven. I should mention to drop them by the tablespoon.

For the whole recipe: calories = 2,967/fat = 74.1/fiber = 28.1. ...so for one cookie it is about 82 cals and 2 grams of fat.


also-Chris is vegan and I'm vegetarian as of a month ago or so, but before that we barely ate meat at home cause it's gross to cook with and expensive. So I make a million stir frys. I use that frozen stir fry mix or broccoli. so i make a slurry with soy sauce, garlic, ginger, chili paste (optional), peanut butter and a little cornstarch or flour to make it like a glaze. Then I cut up some tofu and "pan fry" it on nonstick with nonfat spray, then throw everything together and it's pretty good. If you want a grain too I use quinoa (really fast to cook) or brown rice, but we usually skip the grain if we've had bread or sugar during the day.

If you do want to eat meat, try to switch to eating more white chicken or turkey. I use alot of ground turkey for my cooking, and it's a little cheaper expense wise. I made spagetti tonight with it. Delicious. If you learn to cook more with white meat, you will save on the fat intake from dark or red meat.

Give me a few days to round some recipes up but I certainly have a few.

last night I made penne pasta with sauteed spinach and onions tossed with a garlic marina sauce. I also made baby carrots cooked with a chai tea bag for flavoring. Healthy meal as long as you watch the amount of pasta you eat. I measure out ONE serving(ha ha..because the amount i eat without measuring is usually 5 servings. damn pasta.) and piled on the spinach and onions. eggplant lasagna is good too. I use the eggplant in place of noodles and cottage cheese/tofu in place of ricotta. Veggie fajitas (use portobella strips instead of meat).
You may want to consider buying a good veg cookbook, just make sure its a 'healthy eating' cookbook. Vegetarain doesn't= low cal. Think doughnuts, cheese, etc, LOL. I am eating mainly vegan right now and that seems to be a different story......

Really it is a process. Starting out, we read A LOT of books on healthy eating and vegetarianism-and we're still reading..... I found that changing my eating habits was a catalyst for change in so many areas of my life. You know, you open a door and you see a million more.


I've been working on loosing some wt too. After giving birth I lost some wt initially but I haven't lost much since then. My body seems to hold onto wt when I breastfeed. and when I eat too much cake ;)
